Easy Gingerbread Trifle

Need a dessert that looks showstopping but is easy as pie?! This Christmassy Gingerbread trifle is just what you need!

INGREDIENTS

2 x small or 1 large sticky ginger loaf cake (We bought ours!!) 

Caramel sauce

20 x mini gingerbread men 

Any decoration you like 

For the custard:

800ml whole Manx milk 

4 x egg yolks 

40g sugar 

1 x vanilla pod

3 x tsp cornflour 

METHOD

  1. Make the custard by heating the milk and vanilla in a pan until just coming up to the boil - set aside for 15 minutes to infuse 
  2. Mix together the egg yolks, cornflour and sugar in a large heatproof bowl until it forms a paste 
  3. Pour the milk into the paste stirring constantly until combined 
  4. Strain into a saucepan and heat over a low heat until the custard thickens - stir constantly
  5. Remove from the heat and set aside to cool 
  6. Slice the ginger cake and layer into the bottom of a trifle bowl 
  7. Add a layer of caramel over the cake 
  8. Layer half the custard on top 
  9. Add another leayer of cake and caramel 
  10. Take the gingerbread men and arraneg them around the side of the bowl
  11. Add the remaining custard 
  12. Take the double cream and add a teaspoon of ginger powder 
  13. Whisk until thick 
  14. Add a layer to the top of the trifle 
  15. Decorate with gingerbread men and sprinkles!!
