Need a dessert that looks showstopping but is easy as pie?! This Christmassy Gingerbread trifle is just what you need!
INGREDIENTS
2 x small or 1 large sticky ginger loaf cake (We bought ours!!)
Caramel sauce
20 x mini gingerbread men
Any decoration you like
For the custard:
800ml whole Manx milk
4 x egg yolks
40g sugar
1 x vanilla pod
3 x tsp cornflour
METHOD
- Make the custard by heating the milk and vanilla in a pan until just coming up to the boil - set aside for 15 minutes to infuse
- Mix together the egg yolks, cornflour and sugar in a large heatproof bowl until it forms a paste
- Pour the milk into the paste stirring constantly until combined
- Strain into a saucepan and heat over a low heat until the custard thickens - stir constantly
- Remove from the heat and set aside to cool
- Slice the ginger cake and layer into the bottom of a trifle bowl
- Add a layer of caramel over the cake
- Layer half the custard on top
- Add another leayer of cake and caramel
- Take the gingerbread men and arraneg them around the side of the bowl
- Add the remaining custard
- Take the double cream and add a teaspoon of ginger powder
- Whisk until thick
- Add a layer to the top of the trifle
- Decorate with gingerbread men and sprinkles!!
