INGREDIENTS
2 Manx free range eggs
284ml Isle of Man Creamery Buttermilk
25g melted butter
2 tsp vanilla extract
225g plain flour
25g caster sugar
1tsp baking powder
1tsp bicarbonate of soda
50g fudge cubes
50g milk chocolate chunks
METHOD
1) Pre-heat the oven to 180°C and grease an ovenproof dish
2) Add the buttermilk, melted butter, eggs and vanilla extract together and beat with a fork
3) Put the dry ingredients into a large bowl
4) Make a well and add the wet ingredients
5) Beat until just combined
6) Pour the mixture into the dish and add the fudge and chocolate to the top
7) Bake for 15 - 20 minutes until well risen and golden
8) Serve warm with Greek yoghurt
